Commentary: Xanthan gum is widely used in various industrial applications due to its unique rheological properties as a consequence of an extended rigid rod conformation in aqueous solution. This paper is essentially a fundamental study which reports for the first time the conformation of xanthan following various industrially relevant treatments. It provides direct evidence about the proportion of single strand and double helices, and reconciles the two conflicting models proposed for xanthan conformation.
