We present the first detailed analysis of rising and decaying gravity wave turbulence (GWT) in water. The results show that emerging wave turbulence is characterized by two time scales – a short dynamical scale from nonlinear wave interactions and longer kinetic scale characterizing formation of a stationary state. An initial phase of the wave turbulence decay follows a power law, as expected, but at longer timescales we observed a surprising non-monotonic spectral mode of decay relating to resonant wave interactions. These are unique in studies of GWT and are more generally important for predicting the characteristic timescales of non-stationary turbulent regimes.
