The paper details the results of an EPSRC-sponsored (EP/G058504/1) joint academic and industrial (Altair, Enviros Consulting, Warburtons, Spooners) partnership aimed at improving the energy efficiency of industrial baking processes. It presents new experimental data and high fidelity Computational Fluid Dynamics that are used to improve the overall baking efficiency.
