The work reported here is part of an ongoing research initiative by Fylde Thermal Engineering Ltd., a UK-based company with 25 years experience developing and implementing innovative engineering solutions for the food industry. It is expected that this research will result in a commercial viable and patentable burner system for better control of radiation received by the food during baking, as well as a novel and potentially patentable sensor for the measurement of water vapour concentration in baking ovens. The Kellogg Company (Battle Creek MI., USA) participated in this research, including the construction of a US$2m pilot plant. (contact available)
