This study took a first look at spatial and spectral factors for 3D reconstruction of in vivo tissue surface. Instead of relying on separated facilities to obtain surface spatial topography and spectral mapping, an integral system has been prototyped and verified on human skin over a wide area. An early career research grant has been generated from this work to exploit its potential for assessing the status of myoglobin components and distribution of Intramuscular fat within meat surface. The following research will be expected to produce an objective and affordable approach for food quality grading and control.
