This research mainly demonstrates the crisps processing industry in a very detailed energy wise. It allows us to have a close look of each component (combustor, heat exchanger, fryer) in the real frying process, how they work together and achieve the aim of the process. The developed models can capture the dynamic performance of the system well, when compared to the plant data shown. They dynamic simulation provides insights into the sensitivity of the response of the main variables of the process to

perturbations in the system which occur frequently in commercial frying lines.

Furthermore, the developed model can be extended for prediction of energy flows and optimisation. Part of this work has been presented on the international conference.
