This work, funded by EPSRC (EP/C009681/1), combined two established microwave techniques to characterise foodstuffs, and helped launch the School's e-Agri research theme. It attracted Pepsico to the School and they supported a subsequent PhD project to characterise fried potatoes involving microwave heating. Pepsico went on to support a project in potato plant root imaging in the e-Agri area for the School (contact details available). The PhD student (Sing Kwei Ng) now works in a government-funded laboratory in Malaysia.
