This collaborative study links the fields of ion chemistry, mass spectrometry, microbiology, metabolomics and food science. The focus of this work is the real time monitoring of volatile organic (flavour) compounds released by processed foods. This is a rapidly growing field of research in which the SIFT-MS analytical method has a unique role. This work illustrates the international dimension of SIFT-MS invented and pioneered by Španěl and Smith and now being exploited in several laboratories around the world.
