This work benefited from activities associated with EU project funding (contracts 226507–NMI3, STRP-033256, and RII3-CT-2003-505925) to investigate physicochemical characteristics of a sweetener currently commercialised worldwide. These studies supported a successful grant application for a PhD studentship funded by the Institut Laue Langevin (ILL contact M.Muller, mcmuller@ill.fr). The article further led to contacts with a group at the Emory University School of Medicine (Atlanta) and letter of intent to a Human Frontiers Grant application (LIP000281/2014) being submitted, to support future research.
