This paper results from a project sponsored by San Ei Gen FFi, Japan [contact; Dr T. Funami: tfunami@saneigenffi.co.jp] and reports a fundamental study of the interaction between gum Arabic and bovine serum albumin and the formation of electrostatic complexes. The overall aim for the Company was to obtain an understanding of these systems at the molecular level and to use the knowledge gained for the development of novel emulsifiers to stabilise oil-in-water emulsions for application in the beverage industry and also for the encapsulation of active compounds.
