This work, funded by the EPSRC (EP/C009681/1) and published in one of the highest ranked journals in this field, involved collaboration with Materials Science and Manchester Metropolitan University. The industrial partner was Dalepak, Selby, North Yorkshire (contact details available). The results underpinned later research on salt and fat content of meat products which, together, strengthened the e-Agri research theme developed by the School.
