This paper describes a novel fluid dynamic gauging device that uniquely measures the thickness and strength of soft solids in liquids, in situ and in real-time. This work has resulted in two PhD studentships (2009-2012 and 2011-2014) funded by Procter and Gamble (P&G). P&G has also purchased two devices for in-house Research & Development applications (Anju Brooker, brooker.am@pg.com), as it allows P&G to screen greener cleaning formulations. This paper and subsequent PhD thesis won two prizes (European Hygienic Food Design, 2012; best dissertation at University Cambridge, Department of Chemical Engineering, 2012).
