This paper details for the first time important insights into phenomena which occur in commercially available laboratory microwave equipment utilised in many hundreds of published papers. The combination of numerical simulations and experiments show how significant temperature gradients can exist within heated materials, and that very different results can be obtained depending on the method used to measure temperature.
