This paper demonstrated the mechanism of oxidative toughening of oils in contact with inorganic surfaces at elevated temperatures. This 1) provided better understanding and insight into oxidation processes of oils in bulk and on surfaces (where little work was available in the open literature), 2) tested the efficacy of some novel antioxidant systems under simulated conditions for potential development and use in new home care products by the sponsor (Unilever - Dr T Stirling, Tom.Stirling@unilever.com), 3) provided a foundation for developing novel antioxidant systems derived from sustainable non-food crops, supported by LINK-DEFRA (£232,000) and DEFRA (121,000)
