This EPSRC funded research work presented a conjugate 2-D transient fryer model to investigate the effect of different control parameters on final product properties. The simulation results compared well with industrial plant data. Closer control of the important parameters can lead to up to 10% energy savings. The findings of this work are very important for the frying industry. This research work has been invited by Springer to write a book. The author has been invited to serve as a session chair to present the work on the international conference of applied energy 2012. The collaborated industry is very happy with the results and further collaboration is still going.
