Additional information
This paper describes the first use of bioinformatics in the food sector to look for previously unidentified industrially relevant hydrophobins. Work has identified 75 new proteins for exploitation (for example as biosurfactants) and a new class of hydrophobin. This work represents probably the first exposure of this technology to academics and industrialists active in food research. Work funded through BBSRC studentship and collaboration between Universities of Birmingham and Wolverhampton.
