Morris was European co-editor for this multi-disciplinary volume combining contributions from the industry and academia. Morris authored three chapters ‘Coffee, a Condensed History’ 215-225; ‘Coffeehouse Formats through the Centuries: Third Places or Public Spaces?’ 226-233; ‘The Espresso Menu: An International History’ 262-78. He wrote the ‘Introduction’ to the consumer country profiles 173-5, and was principal editor for this section and that on ‘The History of Coffee’. He recruited, assisted and edited all the European authors in the volume, provided additional material for these and other contributions including the Glossary, and collaborated in the design and delivery of the overall volume.
